Fairly quick and easy recipe for my first post. I apologize in advance if i have left something out. Please feel free to ask, judge, rate and critique. Your thoughts comments are appreciated. If you decide to make this recipe, let me know how they turned out. Thanks for stopping by!
3 chicken breasts
10 flour tortillas
2 tablespoons of butter
1 large onion
4 oz can of green chilies
2 cans of cream of chicken
16 oz of sour cream
2 cups shredded cheese (your choice)
Chili powder (2 tablespooons)*
Paprika (1 tablespoon)*
Cumin (2 teaspoons)*
Salt to taste
*These measurements are approximate as I don't often measure anything. Instead, taste along the way, and find the proper about of salt and seasoning that suits you.
Melt butter in a large skillet. Trim your chicken and slice into small pieces. Put all of your seasoning and chicken into the skillet on about medium to medium high heat. I used a bamboo spatula to stir every few minutes and also chopped the chicken finer as it cooked.
Step 2:
Dice your onion and open the can of green chilies. Sweat your onion in a separate skillet using medium heat and once onion is tender add your chilies.
Step 3:
Once your chicken is cooked through, add your onions and chilies to this pan and leave heat on medium. Allow to simmer as you're finishing preps.
Step 4:
Mix cream of chicken and sour cream together. This will be your sauce and I had a little left over that I did not use. I used a 9x13 but you could also make singles and freeze for later if you wanted. Coat the bottom of your dish with some of the sauce. Now we're ready to make the enchiladas! I would recommend a small measuring cup so all enchiladas receive equal amount of the chicken mixture. Add a pinch of cheese and a scoop of chicken to your tortillas, roll it up and place in the baking dish. Coat the tops of the enchiladas with more of the sauce. Top with the remainder of the cheese.
Step 5:
Place dish into a 400 degree oven for 25-30 minutes. Cheese should melt and sauce in the dish will be bubbly. Serve with a margarita or an ice cold beer. Enjoy!!
